Happy Place, Happy Space
My rescue fruit/veg provider Uglyfood closed its doors several months ago due to lack of funding. Happily, Tezz Solutions (started by one of the UglyFood folks) has brought back lower priced rescue produce, and hence, the Surprise Bundle is now back in our household this week.

I was delighted that our delivery was dropped off by the founder of the service himself – we had a little chat at the door and we caught up on what he’s been doing.

Reading your Joyful Posts brings me to my happy place. I hope having them in one place makes it easier for you to find when you need a bit of happy therapy, too.

Rescue veges and uglyfoods sounds like a great initiative and helpful in the war on food waste. Roasted veges are delicious anytime.

I particularly love roasted veg now that I have my air-fryer – it spares my kitchen from extra heating!

Oh – I have just received an air fryer. Its not new but I am wondering what I can use it for – roast veges you say. What else do you use it for?

We were very tentative in the beginning – just reheating food, crisping up crunchy things (aka fried food), frozen fries. But now, we roast veggies, salmon, chicken breast. I have a friend who regularly roasts whole chickens – I suspect he has a much bigger airfryer than I. Enjoy your new appliance!
I came very late to the airfryer – I resisted for a long time because of counter space shortage. But I really can’t imagine life without it now.

That is interesting how you say the airfryer has become an established appliance in your kitchen. I haven’t yet tried my out yet. I will update you when I do!

That looks great! I tried beets not long ago and was surprised to find that I love them! 😍 I hope you have a great week!

So happy to have you pop in for a visit and to share your love of beets.
It is only in this last decade that I’ve discovered fresh beets – my previous experience has always been pickled or canned. While I loved the pickled version, we never used it much in the home because Loving Husband loathes them. But since we experienced these freshly roasted ones, he has revised his beet opinions! I just love the colour it imparts to soups and salads!

Definitely I’m curious how roasted beets taste!

Quite different from other roasted veggies I’ve tried – and also very different from the pickled & boiled beets!

Ju-Lyn, Thank you for the shout out and your weekend coffee share. Your roasted vegetables look healthy and yummy. I’ll have to look for miso caramel next time I’m in my local grocery store.

I hope you get to try miso caramel – actually, I’m not sure you can buy it in the store; we make our own.

Wow, your bundle was delivered by the founder himself? That’s neat! I hope he’s able to keep the business going, even though the original one couldn’t stay solvent. It’s such a brilliant idea. I hate the idea of wasted food, no matter what it looks like. 🙂

I know, right? It was such fun to catch up with you – he used to work with the previous provider and that’s how I got to know him. I do hope he does manage to make this work.

Yum. I don’t have miso caramel. What would you think is something close to its taste and consistency 🙂

Hmmm, the umami of the miso is hard to replicate, otherwise it is mostly like salted caramel. Can you get miso, Brian? The miso caramel we make over the stove – it’s not too difficult just patience to keep stirring 🤪
